Strawberry and Roasted Chickpea Salad

Tons of strawberries in the grocery store these days..after a lovely brunch with a friend this morning, I used the leftover strawberries in a refreshing salad..

Ingredients

2 cups spring mix

1/3 cup halved strawberries

2 tbsp yogurt dressing: plain yogurt, strawberry preserves, honey, dash of white balsamic vinegar, tsp of oil

roasted chickpeas (toss chickpeas with tamari and honey at 400 for 20 minutes, stirring halfway through)

Toss together and enjoy!

  1. What kind of honey did you use? I’m a fan of the wildflower variety at Tara’s (especially the serve yourself format)

    Can’t wait until the local strawberry fields are in season!

  2. Totally agree about local strawberries, I was thinking the entire time how much better it would be with local fruit! I have never tried Tara’s wildflower honey..sounds great, thanks for the tip! 🙂
