Brown Basmati Rice with Assorted Veggies & Sauteed Tofu

I debated posting my stirfry, because I thought – how basic is a stirfry, that won’t make for a very interesting post.  But, I think that everyone throws different things in them, and when I see posts on stirfries, it  always gives me a new idea for my next stirfry!  When I was younger, my Mom used to skip the rice, and make a stirfry with assorted vegetables and potatoes in a pineapple sauce.  It was tres yummy.  For this stirfry, I cooked the brown basmati rice  earlier in the day, and then sauteed the tofu and veg right before dinner.

Ingredients

1/2 cup brown basmati rice (cooked)

baby brussel sprouts

carrots

broccoli

cauliflower

1/2 cup extra-firm tofu, sauteed at med-high heat for 10-15 mins in EVOO

a good teriyaki sauce – I would normally make it but I was in a rush! I really like California Naturals Teriyaki.

Optional: nutritional yeast for sprinkling on top

Saute the tofu in one skillet.  In a separate frying pan, saute vegetables that take the longest first – in this case, the carrots and cauliflower.  Add in broccoli and baby brussels at the end.  Add tofu to vegetables, stir in the teriyaki sauce.  Serve, and sprinkle nutritional yeast on top.

  2. I like adding noodles to mine, especially if I’m eating it without rice.

    Not sure if you’ve ever tried tempeh, but I much prefer it to tofu. Tara’s has it in stock as well. Read on article on how unfermented soy (tofu) blocks nutrient uptake but fermented soy (tempeh) does not. Yet another reason to give it a go!

  3. Thanks for letting me know the nutrient difference re: tofu and tempeh Mark! I love tempeh too! I especially love tempeh “bacon” or using it as croutons in salads! I actually have to cut back on my soy though – did some allergy testing through my naturopath and it turns out I have a sensitivity to it. Darn!

    I haven’t tried tempeh bacon or croutons just yet, where did you get those?

    When you did the allergy test, do they use electrodes? I’m strongly considering going to a naturopath for one, got any tips?

  5. Very interesting! Haha, I read alternet too. I got the recipe for tempeh bacon from “My Vegan Table”. Very simple – steam 1 pkg tempeh for 10 minutes, marinate in 3 tbsp maple syrup, 1/4 cup tamari, liquid smoke (I don’t usually add the smoke) and a bit of water, and then saute for 5 mins on each side. The tempeh croutons are from this website – a great resource for vegan cooking!

    As for the allergy testing, my naturopath used blood tests and it was sent to a lab in the States. I go to Dr. Sonya Nobbe in Kingston at the Kingston Integrated Health Centre (KIHC). She’s fantastic!

    We (Living Cities) built a small garden for Dr. Nobbe at the front of her clinic. Its a small world!

    I must give those tempeh recipes a try sometime.
