Lentil Walnut Lettuce Wraps

1/2 onion

1 stalk celery, 1 carrot – chopped finely

1/3 cup chopped walnuts, toasted

1/3 cup lentils

1/2 cup TVP, reconstituted (I used a little less than 1/2 cup of boiling broth to do so – let it stand for 10 minutes)

2 tbsp tomato paste + 1 tbsp brown sugar, mixed with a few tbsp of water

1 tsp thyme

2 tsp parsley

salt and pepper

Saute veggies & thyme over medium heat until cooked.  Add in toasted walnuts, TVP, lentils.  Mix together, and add tomato paste mixture and parsley.  Heat through for 5 minutes on low heat and season with salt and pepper.  Spoon mixture onto lettuce wraps.


– Sunflower seeds would be a good add-in!

– I put home-made ketchup on one wrap, but they have great flavour without any sauce!
