Vegan Pasta Casserole

1.5-2 cups homemade (or purchased) pasta sauce (I prefer home-made if time permits because I can throw all sorts of healthy things in it!)

1 cup soy ground (I used PC brand)

2 cups rotini rice pasta

3 tbsp pesto

2 tbsp vegan parmesan

1/3 cup soy mozzerella (my favourite brand is Okanagan’s:

Boil pasta.  Drain, place in 8×8 casserole and mix with pasta sauce, soy ground, pesto, and parmesan.  Season with salt and pepper if you wish.  Top with soy mozzerella and bake at 375 for 35 minutes.  Enjoy!
